Why does Windows update only when I'm about to present?

Windows always seems to start downloading or installing updates right when I'm about to give a presentation, slowing down my laptop and sometimes asking me to restart at the worst possible moment. Why does this keep happening, and how can I schedule updates or change my settings so they don't interrupt meetings and presentations?
